I wanted to share three recipes with you for Mothers Day Breakfast, Brunch, and Dinner.
Breakfast: Apple Cinnamon Pancake Recipe
2 cup: Biscuit mix
1 teaspoon: Ground cinnamon
1 1/3 cup: Milk
3/4 cup: Grated apples, about 2 medium apples
For Cider Syrup
1 cup: Sugar
2 tablespoons: Cornstarch
1/4 teaspoon: Cinnamon
1/8 teaspoon: Nutmeg
2 cup: Apple cider
2 tablespoons: Lemon juice
3 tablespoons: Butter
1.Combine biscuit mix, cinnamon, egg and milk; beat until smooth. Stir in grated apples.
3.Bake until bubbles appear around the edges, turn and bake other side until golden brown.
4.Serve with warm cider syrup. Your apple sauce topping pancakes are ready
1.In saucepan, combine sugar, cornstarch, cinnamon and nutmeg; stir in apple cider and lemon juice.
2.Cook over medium heat, stirring constantly, until mixture thickens and begins to boil. Continue to boil, stirring, for 1 minute.
3.Remove from heat and stir in butter. Makes about 2 1/2 cups of syrup.
Brunch: Chees Balls
1 cup: Cheese- grated
¼ cup: Refined flour
2 no: Eggs
¼ tsp: Chilli powder
½ tsp: Baking powder
Oil for frying
1 tsp: Salt
1.Mix all the ingredients except the oil and beat to a fluffy batter.
2.Rest in a cool place about 15 minutes.
3.Heat the oil and deep fry spoonfuls of the batter to a golden color, first at high then medium.
Dinner: Lemon Chicken
4 no: Boneless skinless chicken thighs or breast (thawed)
2 cloves: Garlic
2 tablespoons: Fresh rosemary (1 tablespoon dried)
2 tablespoons: Margarine
1 tablespoon: Olive oil
2/3 cup: Lemon juice
Pepper to taste
Salt to taste
Take a heavy frying pan and mix margarine and oil together; heat over medium-high heat until margarine melts.
2.Stir fry garlic and rosemary in the oil/butter mixture for 2 minutes and then add lemon juice and bring the mixture to a boil.
3.Add chicken and fry until it becomes brown on all sides.
4.Add salt and pepper to taste.
5.Decrease heat to low, cover, and cook for 20 - 30 minutes or until chicken is fully cooked.
